Cooking Fats and Oils

SOLID COOKING FATS, such as butter, margarine, shortening, lard, cooled bacon grease, and meat trimmings, can be placed in your compost cart.

LIQUID COOKING FATS, such as olive or vegetable oils can be composted in small quantities. Under 2 cups per week, can be poured over yard waste such as leaves or wood chips. Small quantities of liquid cooking oils can also be poured over an absorbent organic material, such as sawdust or coffee grounds before placing them in your compost cart.

To avoid odors, do not pour larger quantities of liquid, food-grade fats into your compost cart.

NON FOOD-GRADE fats, oils, and greases such as motor oils must go in the trash. You can use a plastic jug or jar to contain them.

Never pour any fat, oil or grease of these down your drain. See our FOG Program for more information.

Reduce and Reuse

Use less fats, oils, and greases while cooking (grill, roast, or lightly sauté instead of deep frying, replace oil with small amounts of water or stock, and measure fats instead of free pouring them).

Cool, strain, and save leftover fats, oils, and greases in reusable containers and reuse in recipes to add flavor.

Buy only what you need to limit excess that will become waste.
